They are simply the best biscuits ever! It takes 30 minutes from thinking about them to eating them.
You can easily half the quantities. The egg white quantity is crucial, so I indicated the weight.
Preheat the oven to 170 ºC Fan
- 80 g Egg White (about two medium eggs)
- 150 g Sugar
- 200 g Almonds
- 2 tbsp Amaretto di Saronno
- Whip the egg whites to stiff peaks
- Gently fold in the almonds, sugar and Amaretto
- shape into small balls and bake at 170 °C fan for 15 mins
